One of our FANNE Club members, and recent Happiness Hero in our Delivering Happiness Challenge, Lyne Cormier is an avid baker who loves to spread happiness to others through her excellent baking abilities.
Lyne has used our delicious COW Chips in 3 of her most recent recipes, and she wanted to share them with YOU! 😉
Here's a little more about Lyne:
"I grew up in Dupuis-Corner, on the south east shores of NB, but moved away right after graduation. I lived in Saint John NB for 4 1/2 yrs, St. John’s NL for 12 and Pleasant Grove PEI for 5 (where I discovered Anne of Green Gables Chocolates and COW Chips).
I’ve had a chance to travel the world, but was always drawn to the water. I love kayaking, snorkeling and SCUBA diving. I even learned how to surf in Australia! Even a walk on a beach collecting sea glass is enjoyable for me.
I love food…from growing and processing to creating wonderful meals that I can share with friends and family. I love everything to do with nature (camping, bonfires, snowshoeing, etc.). After living in different provinces, I’m looking forward to settling down one last time at my “little piece of paradise”, living the simple life surrounded by Mother Nature."

COW Chip Cheesecake Stuffed Strawberries
Ingredients:
- 2 pints of strawberries
- 1 package of cream cheese (at room temperature)
- 1/2 tsp vanilla
- COW chips
1. Wash then hull the berries. Then pat them dry.
2. For the filling, whip a package of cream cheese until there are no more lumps.
3. Add the vanilla plus 1/2 cup of icing sugar and mix again until smooth.
4. Crumble up some COW chips. (Lyne used the good old fashioned way…a rolling pin and a Ziplock bag. Not much elbow grease needed for this part, so perfect task for the kiddos who want to help in the kitchen.) 😉
5. Fill each strawberry with the cream cheese mixture, then dip the end in the crumbled COW chips.
These won’t last long…Enjoy 😊
COW Chip Banana Clusters
Ingredients:
- Bananas
- Peanut Butter
- COWS Chips
1. Use still firm to the touch bananas for this recipe. She found that it helped in keeping the integrity longer after they’ve been prepared, so it makes them more convenient to prepare them in advance.
2. Cut the bananas into slices, approximately 1/2 inch thick.
3. Melt some natural peanut butter in the microwave in 10 second increments, until it became very soft, but not liquified.
4. Crumble up some COW Chips. (Lyne used the good old fashioned way…a rolling pin and a Ziplock bag. Not much elbow grease needed for this part, so perfect task for the kiddos who want to help in the kitchen) 😉
5. Next, simply skewer a slice of banana (a toothpick or fork will work), dip it into the melted peanut butter, then coat it with a generous amount of crumbled up COW Chips.
WARNING….you may have a hard time refraining yourselves from eating them as you go. 😊😉
COW Chip Cream Cheese Caramel Dip
Ingredients:
- 1 package of cream cheese (at room temperature)
- 1/2 cup icing sugar
- 1/2 teaspoon vanilla
- caramel sauce
- COW chips
- Fruits or Sweet crackers
1. Whip a package of cream cheese until there were no more lumps.
2. Add the vanilla plus 1/2 cup of icing sugar and mixed again until smooth.
3. Spread the mixture approximately 1/4 inch thick on a serving dish, then drizzle some caramel sauce and sprinkle a generous amount of crumbled COW Chips to top it all off.
4. This dip makes the perfect accompaniment for sliced apples, sweet crackers or biscuits.
